About this Specialty Coffee
Originally found in Ethiopia, Wush wush is a low yield, rare variety that has become popular in specialty coffee because of its uniqueness. Wushwush (no space) actually is a small area in southwest Ethiopia not far from the renowned groqing regions of Jimma and Sidamo. Wushwush is known for its fertile highlands, where rich, vibrant tea growth with sensory properties like those of Wush wush coffee.
El vergel brings this variety to their farm which is in Tolima that has 200Ha area spanning across the mountains in Colombia. This intense batch was made by a pre fermentation in cherry inside Grain Pro bags for 24 hours the followed by submerged anaerobic fermentation in mucilage for an additional 48 hours. For this special batch, Argemiro dried the coffee for only 8-12 hours a day and had stalls made all days in Grain Pro bag, which made the process last 25 days to completely get dried.
