Nelson Ramírez, an adept agronomist and scrupulous farm manager, constantly revolutionizes the manner in which they nurture and process their coffees. At The Espresso Lab we truly admire his dedication which has resulted in some of the most consistently superior flavor profiles we have ever encountered. Their farm, affectionately termed “Chely” gracefully sits in the mountains above Lake Yojoa.
The Catuaí variety coffees cultivated there thrive approximately 1,550 meters above sea level, often enveloped by the thick fog emanating from the lake below. Such cooler climates and other unique factors of this distinct micro-environment deliberately decelerate the coffee's maturation process. The result? A coffee flavor unparalleled in its intricate layers.
With each passing year, they have diligently reinvested in the milling infrastructure of their farm. Beyond constructing one of the most sophisticated drying systems observed globally, they recently introduced a state-of-the-art set of tanks for fermenting and thoroughly washing their coffee beans. To complement this, they've also integrated a new water treatment system, dramatically reducing their reliance on the already limited water resources crucial for processing coffee.
From their inception, they approached farming with a strategic mindset. Nelson Ramírez, a scholar with substantial expertise in planning, structuring, and accounting, began this journey with a calculated plan. Recalling their first encounter seven years ago, they had freshly embarked on their venture with Finca Cheli, a heartfelt tribute to their mother. They presented a meticulously crafted map, underpinned by soil analyses from every plot. From those early days, when the farm produced a mere 50-60 bags, their yield has exponentially grown, now boasting nearly 2 containers, a tenfold increase. This testament to their commitment and prowess makes Nelson Ramírez a standout figure in the realm of agronomy.
