About this Specialty Coffee
Lost Origin Coffee Lab is an experimental coffee processing facility based in Panama City, founded by Franz Zeimetz. What makes it unique is its roots in the world of craft brewing, where Franz first developed his expertise in fermentation before bringing that knowledge into specialty coffee.
Together with his team, Franz has reimagined the way coffee is processed. Hand-harvested cherries from Boquete are transported in refrigerated trucks to ensure peak freshness, then carefully fermented in stainless steel tanks designed with controls for temperature, pressure, and agitation. This scientific precision allows the use of specialized yeast and bacterial strains, unlocking new layers of flavor that traditional methods cannot achieve.
After fermentation, the coffees undergo a meticulous three-stage drying process in clean, climate-controlled rooms equipped with humidity regulation and air filtration. Every step is designed to preserve clarity, sweetness, and the unique character of each lot.
Franz’s philosophy combines creativity and scientific rigor, drawing inspiration from craft brewing while applying it to coffee. The result is a portfolio of coffees that are expressive, elegant, and consistently innovative—showcasing Panama as a hub for world-class experimental coffee.
