Our journey with El Vergel and the Bayter family extends back many years, built on mutual respect, shared values, and an unwavering dedication to quality. We've been privileged to witness the transformation of El Vergel under the stewardship of Shady and Elias, from its early days to its current status as a beacon of specialty coffee.
Growing up with the rhythms of the countryside, Shady and Elias developed a profound connection to the land and the community of Tolima. Their foray into coffee in 2012 was more than a new venture; it was a calling. Captivated by the complexity and allure of coffee, they dove headfirst into the specialty coffee movement in 2014, charting a new course for El Vergel that was aligned with their dreams and aspirations for the farm.
The decision to embark on a varietal project in 2016 marked a pivotal moment for El Vergel. This project was not just about exploring different coffee varieties; it was about finding harmony between these varieties and the unique microclimate offered by the farm's location on the slopes of the Nevado del Ruiz volcano.
