About this Specialty Coffee
El Diviso, nestled in Colombia's Huila region, has become synonymous with innovation and excellence in specialty coffee. Under the stewardship of brothers Nestor and Adrian Lasso, this farm has transformed traditional coffee cultivation into a hub of experimental processes and exceptional quality.
The Espresso Lab's visit to El Diviso offered a profound insight into the passion and dedication that drive its success. Nestor Lasso, at just 22 years old, along with his brother Adrian, took over their family farm and ventured into specialty coffee production. Their collaboration with fellow coffee producer Jhoan Vergara led to the creation of El Diviso, a partnership that combines expertise and a shared vision for producing groundbreaking coffees.
Walking through the lush coffee plots, Nestor shared the meticulous processes behind their acclaimed micro-lots. From cultivating unique varieties like Sidra and Pink Bourbon to implementing innovative fermentation techniques, their commitment to quality is evident in every bean. Nestor emphasized the importance of standardizing protocols and continuously learning from both research and fellow farmers to overcome challenges such as climate variability and market access.
The prospect of a closer partnership with El Diviso fills us with excitement and gratitude. Serving their exquisite coffees allows us to share not only exceptional flavors but also the inspiring story of young farmers redefining Colombian coffee. Each cup from El Diviso embodies the dedication and innovative spirit of Nestor, Adrian, and their team, making it a cherished offering at The Espresso Lab.
