Coffee processing at Giakanja Washing Station follows the renowned Kenyan tradition of meticulous, quality-focused coffee production, where rigorous quality control standards are maintained throughout every stage of processing. Farmers carefully handpick only fully ripe cherries, ensuring that underripe and overripe fruit is excluded to preserve consistency, sweetness, and cup quality.
Once the cherries are delivered and accepted at intake, they are sorted and processed with exceptional attention to detail. Quality checks are performed throughout the process to ensure that only the highest-quality coffee moves forward, reflecting the precision for which Kenyan coffees are globally recognized.
Following processing, the coffee is placed on raised drying beds where it dries slowly over a period of approximately 20 to 30 days. During this time, the coffee is regularly monitored and turned to promote even moisture loss and consistent drying.
