Coffee processing at Giakanja Washing Station follows the renowned Kenyan tradition of meticulous, quality-focused coffee production, where rigorous quality control standards are maintained throughout every stage of processing. Farmers carefully handpick only fully ripe cherries, ensuring that underripe and overripe fruit is excluded to preserve consistency, sweetness, and cup quality.

Once the cherries are delivered and accepted at intake, they are sorted and processed with exceptional attention to detail. Quality checks are performed throughout the process to ensure that only the highest-quality coffee moves forward, reflecting the precision for which Kenyan coffees are globally recognized.

Following processing, the coffee is placed on raised drying beds where it dries slowly over a period of approximately 20 to 30 days. During this time, the coffee is regularly monitored and turned to promote even moisture loss and consistent drying. This patient approach allows the sugars and flavor compounds within the coffee to develop fully, resulting in a vibrant cup profile known for its clarity, complexity, and distinctive fruit character.

Giakanja Washing Station, located in Nyeri County, Kenya, is owned and operated by the Giakanja Farmers' Cooperative Society (FCS). The station serves hundreds of smallholder farmers cultivating coffee on farms that typically average between 250 and 350 coffee trees and are generally less than one hectare in size.

These farms are situated between the southern slopes of Mount Kenya and the foothills of the Aberdare Mountain Range, a region celebrated for its fertile volcanic soils, cool climate, and ideal coffee-growing conditions. This unique terroir contributes significantly to the bright acidity and layered complexity characteristic of Nyeri coffees.

Farmers cultivate a combination of Kenya's most respected coffee varieties, including SL28, SL34, Batian, and Ruiru 11. The SL varieties, originally developed by the Scott Agricultural Laboratories during the 1930s and 1940s, remain highly valued for their exceptional cup quality and deep root systems, which enable the trees to thrive even under limited irrigation conditions.
