Romesas Geisha Natural River Flow
This extraordinary Natural River Flow coffee is produced using a highly distinctive processing method that harnesses the cooling and stabilizing properties of natural mountain spring water to create exceptional clarity, elegance, and complexity in the cup.
Immediately after a meticulous selective harvest, whole Geisha cherries are carefully transported under strict logistical control during a managed three-hour journey to a natural waterfall site situated at 1,700 meters above sea level. This careful handling ensures the cherries maintain their physical integrity before fermentation begins.
Upon arrival, the cherries are submerged directly in the continuous flow of the waterfall for a precisely controlled 96-hour period, from Monday at 10:00 AM until Friday at 10:00 AM. The consistently cold and stable mountain spring water acts as a natural thermostat, significantly slowing microbial activity and creating an extended, exceptionally clean fermentation environment. This unique process encourages the development of enhanced floral aromatics, refined elegance, and remarkable cup clarity.
Following the waterfall fermentation stage, the coffee is transported within two hours to the dry mill, where fermentation is immediately halted and drying begins under strictly monitored conditions. During drying, direct sun exposure is carefully limited through the use of shaded structures, protecting delicate aromatic compounds and preventing ultraviolet degradation that could compromise the coffee's nuanced sensory profile.
Once drying is complete, the coffee undergoes a final stabilization period in complete darkness within a climate-controlled warehouse. This controlled environment prevents light-induced oxidation while allowing flavors to mature, harmonize, and fully express the unique characteristics developed during the River Flow process before export.
