Led by producer Karin Dietrich, the farm is celebrated for cultivating exceptional coffees while preserving one of the region's most biodiverse and environmentally significant landscapes.
Situated at approximately 1,800 meters above sea level, Mt. Totumas benefits from cool mountain temperatures, fertile volcanic soils, and a pristine cloud forest ecosystem. These unique growing conditions allow coffee cherries to mature slowly, developing exceptional sweetness, complexity, and clarity in the cup.
This lot features the Pache variety and is processed using the Natural method. Carefully harvested cherries are dried with the fruit intact, allowing sugars and fruit compounds to develop fully within the bean. This traditional process enhances body, sweetness, and depth while showcasing the distinctive character of the variety and terroir.
The cup reveals elegant notes of pear, raisin, and sugarcane. A silky texture, gentle fruit sweetness, and refined acidity combine to create a balanced and expressive coffee that highlights the craftsmanship behind every stage of production.
