Origin & Variety
Cultivated at approximately 1,800 meters above sea level, this coffee is composed of the Pacamara variety, celebrated for its large bean size and its ability to express remarkable complexity and structure in the cup.
Process
Only carefully selected, fully ripe cherries are harvested at peak maturity before undergoing a natural processing method, where the whole cherries are dried intact on raised beds under closely monitored conditions.
Throughout the drying phase, the coffee is meticulously turned to ensure even moisture reduction. This careful process allows the sugars and fruit compounds within the cherry to infuse the seed, developing greater sweetness, body, and aromatic intensity.
